Stuffed Peppers

Fall is in the air! Here is a great recipe for the whole family. You can use extras for your lunches during the week.

  • 5 bell peppers (I use a variety of red, orange, yellow, green)
  • 1lb ground turkey or grass-fed beef
  • 1 (14.5 ounce) can diced tomatoes, drained
  • ½ cup chicken broth
  • Italian seasoning to taste
  • garlic powder to taste
  • salt and pepper to taste

  • Preheat oven to 350 degrees.
  • Brown meat; drain grease.
  • While meat is cooking, cut peppers in half and remove seeds. Place in a greased 9×13 pan.
  • Add tomatoes, chicken broth, Italian seasoning, garlic powder, salt, and pepper to meat mixture. Cook until warm
  • Scoop meat mixture into peppers
  • Sprinkle peppers with cheese.
  • Cover with foil and cook for 35 minutes. Uncover and spoon broth on the bottom of pan onto peppers. Cook for 10 more minutes.
