Simply Real Health’s Cold Sesame Soba Noodle Salad
Do you guys know about Sarah Adler over at Simply Real Health? One of my girlfriends introduced me to her via her cookbook and I don’t think I’ve opened another cookbook since! Her recipes are so fast, easy and I never have that gross over full feeling after I’m done eating. This Cold Sesame Soba Noodle Salad is my absolute favorite from her cookbook that I make at least once a week in the summer months.
- 1 tablespoon Toasted Sesame Seed Oil
- 1 tablespoon Rice Wine Vinegar
- Juice of 1 lime
I mixed these together and set the bowl aside! Quick note – Regular sesame seed oil and toasted sesame seed oil are not the same. This salad will still be good, but not AS good if you don’t use toasted sesame seed oil (I learned this the hard way).
I always cook the soba noodles according to the directions on the package. Seriously – follow the rules. As an avid no rules ever type human, the directions on the package are crucial – overcooked soba noodles are not good at all (Again, learned this the hard way). Once the noodles are cooked and cooled, I add them to the dressing and set aside.
(These are the Soba noodles I get. Any brand will work!)
- ½ Cucumber
- 3-4 Radishes
- ½ Carrot
- 2 Green onion
I chop everything to a similar size and shape. In Sarah’s recipe she slices everything into rounds, but since I’m lazy and buy my carrots pre-shredded, I cut everything into a skinny matchstick shape so it all matches. Add your veggies to your noodles, mix everything together and enjoy! This is one of those salads that is absolutely better the next day and I’ve also discovered that it can be easily manipulated into more or less servings, depending on how many are at your dinner table that night.
