Recipe of the Week – Meal Prep Kale and Quinoa Salad

This salad has quickly become my favorite meal prep salad for lunches during the week! It seems like a lot of steps, but it’s pretty easy and comes together quickly. It holds up well in the refrigerator for about a week and you can also eat it warm or cold! Sometimes if it is rainy and cold, I pop this in a microwave for a minute or so to get the flavors warm and delicious. This salad is from a barre3 recipe book that I adapted to make my own – it originally just had two kinds of peppers with the kale and quinoa, but I added the sweet potatoes and garbanzo beans for a little more volume and the artichoke hearts for some more flavor. I encourage you guys to add foods that you like when you are meal prepping – that ensures that you will actually eat what you prep!

Ingredients

  • 1 Cup Quinoa
  • 1 Bunch Kale, stalks removed and chopped
  • 1 Sweet Potato, diced
  • 1 Yellow Pepper, diced
  • 1 Can of Garbanzo Beans, drained and rinsed
  • 1/2 jar of Artichoke Hearts, chopped

Dressing

  • 1/4 cup Olive Oil
  • 1 Tbsp Dijon Mustard
  • 3 Tbsp White Vinegar
  • 1 Shallot, diced
  • 1 Lemon, zested and juiced

First dice the sweet potato and roast the pieces in a 400 degree oven for about 15 minutes, or until soft.

While the sweet potatoes are roasting, I usually make the quinoa, but this week I had leftovers which made things super easy! I mixed up the dressing in the bowl I was using for the actual salad, which is great for less mess.

Once the dressing was ready, I added the quinoa, pepper, artichoke hearts and garbanzo beans.

The final step is to cook the kale with olive oil and garlic, until it is wilted slightly. I usually leave it slightly under cooked, because I dislike soggy vegetables. But, you can cook your kale however you want, or even leave it raw!

Once the kale and sweet potato were ready, I added them to the bowl and mixed everything together.

This is the type of salad that gets better the longer it sits, which makes it perfect for meal prep! This makes enough for me to have four lunches during the week.
