Recipe of the Week – Breakfast Cookies

In my never ending quest to find easy things to eat for breakfast, always wanting to bake something and THEN wanting to bake something fun for Coach G during months of mass, I discovered these breakfast cookies from the Minimalist Baker. I am so so happy that I found this recipe! These cookies are super easy, delicious, and perfect for breakfast or a snack. Plus, who doesn’t want cookies on hand at all times? Here’s how the breakfast cookies came out –


  • 2 bananas
  • 1/3 cup Pumpkin
  • 1/2 cup Almond Butter
  • 2 Tbsp Coconut Oil, melted
  • 1 tsp Vanilla
  • 3 Tbsp Honey
  • 1 1/2 cups Oats
  • 1 cup Almond Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 Tbsp Dried Cranberries
  • 1/2 cup Dark Chocolate Chips


First, I mashed up the bananas and added the pumpkin, almond butter, coconut oil, vanilla, honey, baking soda and baking powder and mixed it all together. I rarely have perfectly ripe/overripe bananas when I’m baking – they usually go bad before I can get to them, or they are basically green (like the ones above). But, even if your bananas are fresh, all that means is that they don’t mash up as much and your cookies will have some chunks of banana in them. No big deal!


Then, I mixed in the oats and almond flour.

I added in the dried cranberries and dark chocolate chips and mixed some more.


Once everything was mixed together, the cookies were ready to bake!


I use my ice cream scoop when I bake cookies so everything is the same size. It also has a swing lever to release the scoop onto the cookie sheet – less mess! I make these cookies slightly bigger than the recipe says, mostly because I like an easy grab and go item for breakfast and it’s easier to grab one big cookie instead of 4 small ones.


Don’t forget though – if you make something bigger than the recipe calls for, it usually has to cook longer! These cookies were in the oven for about 25-30 minutes.


These cookies are super easy to mix up and delicious, and who doesn’t want to eat cookies for breakfast?
